6♥. It's not hard to construct hands where both 5♠ and 6♥ make with everyone having bid sensibly. Since my guess is that neither contract is likely to go more than one off, bidding is going to show a large profit if you faced this position multiple times.
Sorry, just seen that this is pairs. That makes it much closer. I still bid, because I have an appalling track record when I take an action just because it is pairs.

I am with Phil, partner's double suggests he has 3 bullets, and only 4 keycards are needed for slam when he is 2551. If ♥K is missing we can still get lucky.

I was faced with the same decision in this spot after a similar but shorter (and therefore slightly less informative) auction. I think 6♥ is completely clear at IMPs because as Phil says it is going to cost very little in the long run. Then again partner's double is going to be very closely affected by the form of scoring so perhaps we would face a different problem. At MPs I really found this a tough decision.
Bidding 6♥ has two ways to win:
1) It makes (perhaps doubled) OR more likely
2) 5♠ was making
and one way to lose
3) 5♠ was -1 and 6♥ is either -1 or -2 surely doubled.
No. 1) seems a thin chance but perhaps might tip the scales... I couldn't tell whether 2 or 3 was more probable.

I wish I even had a clear way to try for a grand. I can't imagine defending when partner has the red suits and then shows a good hand here. I am not the least bit worried that RHO doubled 5♥.
