In my TOX response structure 2♥ is a little bid of an underbid and 2♠ showed xtras and is invitational so I would accept with 4♠ altho I have no real problem with 3NT either.

5333? Never held that one before. Anyway I have too much for only 2♥, I like 2NT more. I bid 4♠ in the given situation.

Depends a lot on which card is not there. If I have Jx Jxxxx Axx KQx then I would jump to 2H, I don't think this is too much. After 2S I would bid 2NT. I think that we are in a GF auction so I'll give partner some room to bid his hand.
Please note: I am interested in boring, bog standard, 2/1.

2S creates a GF because:
The 2H jump showed values, like 9-11 or whatever.
The 2S bid shows a hand too strong to overcall 1S, at least a great 16+
Therefore logically you are in a GF. You have already preempted your own auction, no need to jump around more.

Well I'm not sure why you have 14 cards
but I agree with 2H. 2S here should IMO be inv+ [not necessarily a huge hand, because it's definitely forcing], over which 4S seems fine if you hold 3 spades. If the hand actually has only 2 spades, I'd bid 3NT over 2S since you have a max for the 2H bid.

Yes, the hand should have one less diamond.
