I think NS would quickly bid to 5D and I would be happy to reach 6S.

Maybe

1S - (3D) - 3S - (5D)
6S all pass

and the result can be plotted on a graph.

Ah, you tempt me to show MisIry since you asked How would I show West hands... so be it.

(well... after opening 1S north will barrage in diamond, how high is unknown)
How would you show the West hand?
(I would open it 3♣ showing ether a diamond preempt or a strong two suiter with clubs and one of the majors. )
How do you reach the laydown grand?
(depends on what North's bid over 3♣ is and what their agreement for what their bid over 3♣ means I guess (see below)

If North passes (unlikely), bidding woudl be...

3C - 3D
4C - 4D
5C - 5H
6C - 7S

Where, 3D was pass correct, 4C was black two suiter with 3 losers, 4D was "denial cue-bid" (no control in diamonds), 5C was heart king is a cover card, but opener has both black suit queens, 5H is does a thrid round heart control help (King and Ace -- if held) already known to work. 6C is third round is golden, pick slam, 7S is my spade king and now doubleton heart takes care of your three losers).

Showing auction with barrage bid over 3C here will depend upon what the bid was.

I think it's very easy to bid the grand with no interference in standard. Given han's start I hope I'm not subconciously double dummying, but why wouldn't west bid 6♣, east 6♥, west 7♠?

Interesting side problem: I would bid hearts not raise diamonds with the South hand. Does that make bidding the grand easier?

Aggressive youth would be 4♠ with east hand after 3♦. After that it is just question how fast we are at slam level

And yes. I would cooperate with 5♥ cue if partner makes some kind of slam move

Even a not so young player like me would raise to 4♠ with the east hand.
