After 1D 2D is it better to show shape or controls with possible 3NT in mind.

In 2 over 1 its standard to show control. u know that 2D means no 4 in major so unless u didnt open with 6D and 5 in major u dont have fit. So 2S here would mean i have spade control but not control in hearts or club

Best is to play some artificial continuations, but of these two I'd show shape rather than controls.
The example hand is a good example: which game do you want to be in? Or are you stopping in 4♦? I think hitting the brakes with this 14-count opposite an opening is not a great use of bidding space, so realistically you are choosing between 1 down in 3NT (but a defensive error might let it through) or 1 down in 5♦ (with no chance of stealing the making trick).
Watch out for recommendations of controls - they were standard half a century ago, and they still pop up from time to time.

In the real world east bids over 1D, so this hand, which clearly is a poster child for avoiding 3N, is misleading.

And after (say) 1D (1H) how does it go at expert level?
1D (1H) 2H
It is not because things are difficult that we do not dare, it is because we do not dare that they are difficult.

Seeing only the N/S hands, I want to be in 3N, especially at MPs. And I don't want to have shown controls, because that will tell the opps what to lead.

In my preferred method, which I wrote about years ago in Bridge World, my auction would be 1D-2D/2n-3n. If they lead a heart, we won't make it unless they block the suit. Next.

I think the correct word is stopper, not control.
QJx is a stopper, not a control, same as a small sg which is a control but not a stopper.
Anyway, I think showing shape rathe than stoppers (esp if resp can have a 4-cd major on the side) tends to better results. When both hands are bal, you do not want to play 3NT and too bad in this example, maybe H or 44, or block, or are not led. While 5D is always donw even if they do not take their tricks on the opening lead.
I decided against that after reaching 3NT with Jxx facing 3 small. Having denied a S stop (1C 2C 2D 2H 3D) and hearing partner cue S as a last try, I thought Jxx could be enough to cooperate. They cashed 4 tricks and I had the rest. The other table did not have the nerves to bid and lost 3 tricks immediately in 5C. I wish I could have bid as confidently with 3 small as well😁
