There are a row of buttons. Does switching them to orange stop strangers joining a game that is in progress?

The two orange buttons (if we are looking at the same thing have to do with Kibbers: those merely watching but not playing). If you move them to the left then people cannot join to watch and cannot chat to the players). The white buttons are the ones you want I think.
Move the middle white button (Permission required to play) to the right and they must ask you if they can join the table. If you really want private then move the bottom white button to the right and your entire table becomes invisible which should ensure NO ONE will be joining).
If you want to practise with bots and dont want people dropping in move the top orange button to the left (that means no kibbers allowed) and the middle white button to the right: Permission Required to play).
